Most recently, Deana from our sales team had the chance to immerse herself in the magic of Los Cabos during a stay at the luxurious Chileno Bay Resort & Residences in Mexico, with Auberge Resorts. From inviting turquoise waters and pristine coral reefs to the warm, thoughtful service at the resort, Deana’s trip perfectly captured the unique blend of relaxation, fine dining, and adventure that Los Cabos is known for.
In her review, Deana takes us along on her journey – from oceanfront breakfasts and lantern-lit cliffside dining to paddleboarding at sunrise and private yacht tours. Her experience showcases why Chileno Bay stands out as both a serene sanctuary and a hub for unforgettable activities. Through this Chileno Bay Resort review, you’ll get a true sense of what it’s like to stay in one of Mexico’s most desirable locations, and why this resort should be on every luxury traveller’s wish list.
Overview & First Impressions
I’ve just returned from the most incredible trip to Los Cabos, and I couldn’t wait to share it with you. This destination has such a unique blend of luxury, adventure, and authentic Mexican charm that I think it will tempt many of you to add it to your wish list.
We flew from London Heathrow to Mexico City, then took a short connecting flight to Los Cabos. From there, it was just 30 minutes to my home for the trip: Chileno Bay Resort & Residences, with Auberge Resorts Collection.
From the moment we arrived, the welcome was exceptional – smiling staff ready to look after every detail. The resort feels like a contemporary sanctuary: calm, chic, and beautifully set along one of the area’s most desirable stretches of coastline, with swimmable waters and pristine coral reefs.
Accommodation – Chileno Bay Resort & Residences (Los Cabos) with Auberge Resorts
My room was spacious and light, with a private balcony, ocean views, and a minibar stocked with complimentary soft drinks. I especially loved the outdoor shower—perfect in the warm evenings—and the huge walk-in wardrobe. The bed was unbelievably comfortable, and turndown service each night was a lovely touch.
Food & Dining (Chileno Bay Resort, Los Cabos)
Chileno Bay Resort operates on an à la carte basis rather than all-inclusive, which means you get to explore its excellent dining options. Breakfast overlooking the ocean was a highlight, everything freshly prepared to order. Dinner at Yaya brought Mediterranean flavours with a Latin twist, while the beachside Taco Bar was ideal for something more relaxed. There’s also a courtyard coffee shop and a lively bar with cocktails and DJ sets after dark.
Resort Amenities & Experiences
Beyond the food, the resort offers endless experiences: cliff hikes, sunrise paddleboarding, surfing expeditions, golf, private catamaran sailing, and even off-road adventures.
That evening, we visited the legendary One&Only Palmilla (San José del Cabo). This resort is synonymous with luxury worldwide, with one of the region’s largest Jack Nicklaus – designed golf courses and an almost overwhelming list of experiences: from yacht charters and whale-watching cruises to tequila tastings, art classes, and authentic wellness rituals.
Acre (San José del Cabo)
The next morning, we transferred to Acre, a working farm and hidden gem with mango and citrus groves. It’s a true farm-to-table experience, where you dine under towering palm trees in the open air. Acre also offers some of the most unique stays in Los Cabos—treehouses suspended above the jungle, haciendas with plunge pools, and tucked-away villas. The property even has an animal sanctuary with rescued dogs, goats, and chickens. I took part in a cookery lesson here, learning how to make mole and ceviche with the chefs—fun, informative, and delicious.
Grand Velas Los Cabos
On Day 3, we explored Grand Velas, part of a renowned Mexican hotel group. Here, oversized ocean-view suites (over 100 sqm!) blur the line between indoors and out. The property cleverly caters to both families and adults, with two separate sections. Families benefit from the unique “baby concierge,” offering everything from pushchairs to bath toys and snacks at no extra cost, while adults can retreat to quieter areas. Foodies will be in heaven with seven gourmet restaurants, including the Michelin-starred Cocina de Autor, which we were lucky enough to experience.
San José del Cabo – Culture & Flavour
Day 4 was devoted to culture and flavour. We headed to San José del Cabo for an agave tasting in one of the oldest local venues, where I learned about the history and distinct flavour profiles of tequila. Afterwards, we wandered the cobbled streets, admiring colourful shops, colonial buildings, and the beautiful San José Missionary Church at the heart of the town.
Cabo San Lucas – Yacht Tour & El Arco
Day 5 was a dream: a private yacht tour. From the Cabo San Lucas Marina, we set out with an open bar, plunge pools, paddleboards, and snorkelling gear at our disposal. We spotted sea lions and birds, then sailed past El Arco, the iconic rock arch where the Pacific meets the Sea of Cortez.
That evening brought one of the most memorable dining experiences of my life: Cocina del Mar at Esperanza Resort (Cabo San Lucas). Perched on cliffs above two private beaches, the restaurant glows with lanterns as waves crash against the rocks below. The just-caught seafood was extraordinary, but it was the setting that truly made it magical—a place I’ll never forget, and no surprise it has been named Restaurant of the Year five years running.
Montage Los Cabos – Farewell Brunch (Santa Maria Bay)
On our final day, we visited Montage Los Cabos for a farewell brunch. This beachfront sanctuary spans over 40 acres along Santa Maria Bay, with just 122 rooms and 52 residences. Direct access to the ocean makes it ideal for snorkelling and diving, while the dining is exceptional. Our brunch spread included oysters, chocolate clams, pork belly, French toast, and more—a fitting finale to the trip.
Why Visit Los Cabos?
Los Cabos is so much more than just a beach destination. With whale-watching (November to February), desert landscapes, vibrant Cabo San Lucas nightlife, the colonial charm of San José del Cabo, and some of the world’s most luxurious resorts, it’s an experience like no other. For UK travellers, it’s an easy connection via Mexico City (a great stopover in itself, especially during the Day of the Dead festivities), or just two hours from Los Angeles if you’re combining it with California.
I can’t recommend Los Cabos enough – it’s the perfect mix of relaxation, culture, fine dining, and adventure.
